I must also mention that it is important to a thick wire to chassis motherboard without the above can recognize the HDD but not initiate Dreamshell 2.5. And I also noticed some problems with some games minimum or starting shows the cover of the GD-Rom (file 0GDTEX.PVR) distorted, no problems during the game but I must mention that on rare occasions the game lock (Dead or Alive 2 Limited) even if usually runs smoothly.
When this was tested with 4.0.0 RC2 Dreamshell not keep trying to reach RC3 as I had problems updating to RC3 on my DC and I'm solving all this these days
When everything is up and running again talk more about it.

Can you post some pics of our modded dreamcast with 500GB HDD?

There is no limit to the capacity and HDDs worse (like the PS3) work well .

I mean, it's important to weld a thick ground wire, usually HDDs give problems due to lack of ground wire

I had already used that SATA bridge, I can confirm it works very nice along with G1-ATA DC.

I use this SATA> IDE Converter, works perfectly with my 2TB SATA hard drive
